Poppycock's, a contemporary restaurant here in Traverse City, serves theirs Mediterranean-style with feta cheese & a saffron-chive cream sauce. And as delightful as that is, your vegan version is THE BEST! I just had it for lunch. And I didn't miss the cheese or cream sauce a bit !
