Taboule Salad Sandwich

Here's a fast, easy and delicious sandwich that takes nothing to prepare and completely satisfies.  I used store bought ingredients, but if you have your own yummy homemade versions on hand... well, lucky you!

Taboule Salad Sandwich

Serves 1

1 pita
2-3 tablespoons of hummus
2-3 tablespoons of taboule
olive oil

In a saute pan, preheat a little oil. Lay a pita flat on a cutting board and spread the hummus over the entire surface. Do the same with the taboule. Cut the pita in half and fold it over so the hummus and taboule are sandwiched. Cook until the bottom is golden brown. Turn over and cook the other side until golden brown. Remove, slice into triangles and serve hot.

This would make a great hot hors d'oeuvre cut into small triangles!

I make and eat tons of hummus but I am not sure what taboule is?

It's so nice to hear from you again.

Tabouli is a Mediterranean dish made with parsley, bulgur wheat, tomato, onion, olive oil and fresh lemon juice. I think it's origin is Lebanese, but I'm not sure. It took me a long time to appreciate it's flavor, but now I'm a fan!

Oh yes, now I know what you mean. I actually have some bulgur wheat at the moment so I will give it a try, thanks :)

As I'm finishing this right now, I'm going to be so bold as to say that this is my new favorite lunch. I had hummus and pita bread on hand so all I had to go buy was the taboule (Trader Joes - organic and great price). This was a breeze to pull together, taking only minutes. The taste combinations (hummus, toboule, olive oil-toasted pita) is AMAZING. How could something so simple be so good?! Thanks for another fantastic, good-for-you recipe Marcia!
